Sweet Maple Salad Dressing
by Hans Ruhland, ND

Take your favorite salad dressing bottle, and fill in the following proportions:

  • 1/5 flax seed oil and/or olive oil
  • 1/5 unfiltered apple cider vinegar or balsamic vinegar or lemon juice (does not keep as long)
  • 1/5 filtered water
  • maple syrup or honey to taste
  • salt (preferred) or soy sauce to taste
  • 1 teaspoon xanthan gum (thickener) per pint of total volume
  • a pinch of cayenne pepper to taste
  • a small amount of paprika for color
Experiment with small amounts of other herbs and spices, including celery seed, mustard, coriander, dried carrot tops, dried celery, etc.

Be sure to leave enough room in bottle to allow ingredients to mix when you shake the bottle.
Shake well before use. Thickener works quickly, but allow an hour to fully thicken.
