Makes 2 - 9x13" crusts

• 3 cups oat flour (contains some gluten)
• 1 cup tapioca flour
• 2 teaspoons xanthan gum (optional)
• ¾ teaspoon salt (optional)
• 3 tablespoons honey, maple syrup, crystallized sugar cane juice, or other sweetener for quiche-like dish; use 1/4 cup sweetener for pie
• 2/3 cup very cold water (warm if breadmaker manual calls for it)
• 2/3 cup coconut oil (preferred) or olive oil

Combine all ingredients and beat with fork.
